I love fajitas! The aroma of them cooking is just mouth watering! I have perfected my fajita recipe and I thought I would share it with you!

No need to buy the store bought fajita seasoning packets! The ingredients are things you probably already have in your spice cabinet. If not, you will definitely get more bang for your buck by buying the seasonings and making it yourself. You’ll also be able to decrease the amount of sodium and tweak the recipe to your liking. I’m telling you, once I started making it myself, I have NEVER gone back to the packets! I didn’t know what I was missing! The little bit of sugar in the recipe really elevates the flavor!

I like to use a grill pan for this recipe to get the “grill marks” on the chicken and veggies. This is the grill pan I use. I recommend buying this scraper that makes cleaning easier and also this silicone handle holder so you don’t burn yourself on the handle! It’s a great pan and allows for grilling in doors during cooler weather. We don’t have weather that’s too cold to grill in South Florida, but since I haven’t mastered grilling on my husband’s Green Egg yet, this cast iron grill pan is perfect for my needs!

This recipe easily could be used with chicken, flank or skirt steak, or shrimp – or all three! I also use this recipe for taco seasoning, but I add a little more cumin and chili powder.

Recipe Notes

Usually, I buy Trader Joes frozen grilled fajita veggie mix so that I have all of the veggies on hand when I am in the mood for fajitas! This saves a little bit of time and money and I don't have to worry about using them before they go bad. If you don't have a Trader Joes near you, most grocery stores carry a mix like this.

You can also substitute Mojo marinade and add the fajita seasoning to it. I have done this on multiple occasions and it was delicious! Use what you have! The Mojo marinade is great for so many other meals as well.

Adjust the sugar, salt, and red pepper flakes to your taste!

I hope you enjoy this recipe as much as I do! Leave a comment below and tell me what you think!
